1/4 kg of chickpeas
1/2 kg of patatas
1/4 kg of green beans
1 ripe tomato
1 small onion
Put the chickpeas to soak the night before. Cook in a pot with water the chickpeas and the green beans in pieces for about 45 min.
Afterwords, add the chopped potatoes and the pumpkin.
Prepare a stir-fry of chopped onion and tomato. Once it is ready, add a teaspoon of sweet paprika, trying not to burn it. Add it to the pot with the other ingredients already cooked and with some saffron and some dried mint.
Boil it all for about 30 min over medium heat. Turn off the heat, leaving the stew stand for few minutes.
